Fluffy Pancakes (gluten-free)

I’ve been eating gluten-free for over a year and it took me about that long to find a pancake recipe that I love. This one is so much like ‘normal’ that my kids haven’t ventured to ask if they are gluten-free (they have had quite a few gluten-free flops, unfortunately!)

By leaving the pancake batter to sit for a few minutes before baking, the pancakes come out really light and fluffy. You’ll probably find the last couple pancakes to really fluffy. Enjoy!

Fluffy Pancakes (gluten-free)

Ingredients

  • 2 1/3 cup Bob's Red Mill Gluten-Free All-Purpose Flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 tsp xantham gum
  • 2 eggs
  • 4 tbsp butter
  • 2 cups milk
  • 1 tsp vanilla

Instructions

  1. Preheat a griddle or pan over medium.
  2. Mix the dry ingredients together.
  3. Mix the eggs, melted butter, milk and vanilla together and pour into the flour mixture.
  4. Let mixture sit for 5 minutes (it will rise a little and makes the pancakes fluffy).
  5. Scoop 1/4 cup of batter onto the hot griddle or pan and let each side cook for 1-2 minutes.

My son is also not eating dairy, so I used almond milk & canola oil rather than that butter and regular milk–added blueberries as well as using my own Gluten-free mix.
